The easiest method if you dont mind tackling some semi-nasty chemicals is to switch to a spray-on 2k urethane finish. Polyurethane provides great protection but when it starts to get cut marks and areas of wear theres nothing much you can do except strip back to bare wood and start from scratch.
Polyurethane varnish shellac mineral oil and wax are generally used.
You now have a surface tha looks like the wood you chose with no finish to speak ofhowever stains wipe right off with soap and water. And knowing the right product to choose can save work further down the track. A Varnique finish is as close to maintenance free for a wood counter top as you can get. Sand the pine down to bare wood if it isnt already Use Zinsser wood bleach to minimize the yellow color Give the whole thing a coat of water-based white wash pickling stain.
